Corn and sweet potato soup with coyo


I had a few Corn on the cob that we didn't use this week and some small sweet potatoes that were looking a bit sad, so I turned them both into a yummy soup, super simple and easy to make, you will need a blender though :)

Recipe

yields 4

2 small onions

3 cloves garlic

4 corn on the cobs

300g sweet potato

water- enough just to cover

salt and peper

Natural Coyo (coconut yoghurt)

cut the corn of the cob by standing it straight up and down and running the knife down each side until all corn is removed.

peel and chop sweet potato, cut into smaller pieces so it cooks quicker.

Slice onion and garlic, and sauté with a little oil in a pot until they have some colour

add the prepared corn and the sweet potato.

Cover with just enough water to make sure everything is fully submerged.

bring to the boil and leave to simmer until the sweet potato is soft.

while still hot blend the mixture until smooth

Strain the soup using a fine sieve, just to get rid of the corn pith, that stuff isn't very nice in a soup.

if the soup is to thick for your liking add a little water ( this is way you blend the soup hot)

or if your not trying to be dairy free add some cream :)

serve right away with natural coyo yoghurt, or pack down into portions for another day :)
