kale, garlic & cashew pulp Dip

I make a litre if not more cashew milk a week, since now my daughter is only allowed limited dairy.
So there is heaps of cashew pulp left, and I really don't like chucking it out so I've been freezing it for a rainy day wondering what to make with it.
When finally I stopped being lazy today and made a simple dip with some kale I brought and never used last week! so this dip is full of left overs :)
Recipe
500g cashew pulp
half a bunch of kale ( or any green leafy veg you may like)
2 garlic cloves
2 pinches of salt
2 sprigs Spring Onions (just the green part chopped)
40g olive oil ( good quality I use Joseph Olive oil)
pepper
juice of one lemon
Chuck everything in a blender and blend until smooth, adjust the seasoning or add more lemon juice to your liking.
use as a simple dip, pizza base sauce, pasta sauce, the list is endless :)
