Spring onion + lemon cashew cheese
OMG this one is a winner! still playing around with using up my left over cashew pulp from my cashew milk, and omg this one taste amazing, especially on a nice piece of real sourdough! :D:D:D
Spring onion and lemon cashew "cheese"
300-400g cashew pulp
3 sprigs of spring onion, chopped fine
1 lemon juice
salt and pepper
add everything to a blender and blend until incorperated completely, remember to season to your liking, you may even want more lemon :)
enjoy on toast, or as a dip.
