Raw Broccoli pesto

I Love the fact that this recipe is super healthy and pretty much tastes like the real pesto we know and love but with out the cheese and the expansive pine nuts :)
so this can be a vegan pesto or just a delicious way to add some more vegetables to your diet.
Recipe
1 head of broccoli
1 bunch basil
1 bunch parsley
200g raw cashews or raw almonds
2 gloves of garlic
50-100mls good quality olive oil
1 lemon juiced
salt to taste
place everything but only 50mls of the olive oil to start with in a blender.
blend until nice and smooth, may be a little chunky from the nuts.
taste and season, the pesto may need a little more lemon juice or salt for your taste buds.
Depending on what you will be using the pesto for you may need more olive oil, for example to coat pasta.
for a nice chunky dip perhaps leave it the way it is :)
I also use this as a spread for sandwiches,
but my absolute favourite is tossed in some pasta with some roast chicken :)
