cauliflower "fried Rice"
Grain free and Vegan, and it does almost taste like fried rice :)
this one is a staple in our house now after some inspiration from some friends that have gone paleo, Thanks Jess and Hoan.
Recipe
feeds 4
1 onion (diced)
3 garlic gloves (diced)
half a cauliflower ( grated on cheese grater)
1 red capsicum (diced)
2 carrots (diced)
a few hand full of kale chopped
3 Brussels sprouts (sliced )
soy sauce to taste
half bunch spring onion (sliced)
It is important to try and chop everything rather fine, as it is a stir fry and everything is meant to be cooked quick, and still have some bite to it, try not to cook all the nutrients out of your food.
sauté onion and garlic until softened and they have a little colour
add the diced carrot and kale,
add capsicum and caulifower
cook until slightly softened a few minutes max
add a few teaspoons of soy sauce at a time until you have the flavour you like
when your about to serve toss the spring onion and raw brussels sprouts in, I love raw brussels sprouts as its more of a fresh crisp flavour raw nothing like when its cooked.
serve hot or have cold for a snack or lunch.
