chicken peanut butter satay

It's that time again... end of the week when searching my fridge for something to make for dinner... this is what we ended up with tonight pretty delicious :)
Recipe
feeds 4
Peanut satay sauce
4 Tbsp peanut butter crunchy or smooth
2 Tbsp soy sauce or tamari
1tsp fresh grated ginger
juice of one lemon
4Tbsp warm water
pop everything into a bowl and whisk together, may need a little more water just to help bring together
Vegetables and chicken
2 chicken breast or 400g chicken stir fry pieces
1/4 cabbage red or green (chiffonade)
1 capsicum (sliced)
3 carrots (chopped thinly so they cook quickly)
1 brown onion (sliced)
2 Tbsp rice bran oil
If using chicken breast, cut into stir fry strips
heat wok or fry pan to very hot, almost smoking
add 1 tbsp rice bran oil and sear chicken
once all chicken has been seared leave aside
get pan or wok very hot again
add 1 Tbsp rice bran oil and caramelise onion
then add the carrots
once carrots have soften a little add in cabbage and capsicum
now add in the peanut satay sauce making sure to cover everything
now add in chicken and serve :)
Please feel free to add whatever vegetables you have laying around the house :)
peanut butter goes with everything in my books :P
