nuoc cham dressing & crunchy Salad,

Tonight is our end of the week before we get a chance to go grocery shopping
so tonight was a chuck together kind of meal.
I always have a nuoc cham ( vietnamese dressing) sitting in the fridge for nights like these.
Recipe;
serving 3
Nuoc Cham
5 garlic cloves
3 red chillies
50ml fish sauce
100ml rice wine vinegar
50g palm sugar
50ml lemon sugar
chuck everything into a blender and there you have it a awesome dipping sauce, salad dressing or whatever you like.
If you do not have a blender, dice everything super small and whisk together.
crunchy salad
2 handfuls of spinach
2 carrots
1 zucchini
hand full of sprouts
hand full of alfa alfa
half bunch mint
half bunch coriander
hand ful of peanuts
using a peeler, peel the carrots but keep peeling until there is hardly any carrot left, you will get beautiful ribbons and that thin and edible raw
you can do the same for the zucchini or use a spiralizer as I have ( I found mine for $25 at a homewares shop )
tear the coriander and mint
mix everything together with about 60mls of dressing
this salad also goes amazingly with pork, beef or chicken :)
